Loopy Lupin! Have you heard of Lupin?
Lupins are legumes, packed with fibre and protein. They are incredibly nutrient dense and would be useful for athletes to enjoy on low training days. They are also appropriate for vegetarian & vegan athletes or those with fructose malabsorption issues or coeliac disease. Their composition comprises of 40% protein, 37% fibre and are rich sources of potassium, magnesium, calcium and iron.
Fun facts: Compared to these products Lupin has almost: 3 x more protein than quinoa, 3x more dietary fibre than oats, 3x more antioxidants than berries, 3x more potassium than bananas and 3x more iron than kale!
Give this recipe a go! Zucchini, haloumi and mint fritters
Ingredients: 1 cup of Lupin Flakes, 1 cup of Zucchini, 1/2 cup haloumi, 1/2 cup mint leaves, 1 egg, salt/pepper/dukkah to flavour!
Method: 1. Add all ingredients to a food processer & blitz until well combined. 2. Make into patties, panfry with extra virgin olive oil. 3. Serve with leafy green salad and cherry tomatoes!
