Nutrition Tip | Rhubarb

Rhubarb - vegetable, fruit or herb? You may be surprised to learn that Rhubarb is actually a VEGETABLE! So technically speaking, enjoying a baked rhubarb & apple or strawberry pie or crumble is healthy and will provide one of your daily serves of vegetables! As always, enjoy in moderation, especially if it's accompanied by ice-cream or double dollop cream! Rhubarb is a nice source of calcium, potassium and beta-carotene, key nutrients for all athletes.  Why not try some poached rhubarb on top of some natural yoghurt?

RECIPE: Poached Rhubarb

Ingredients: 1 bunch of Rhubarb (cut into 6cm pieces), (1/4-1/2 cup) caster sugar, 1/2 cup of water, 1 x 3cm piece of fresh ginger, 1 cinnamon stick & 1 whole star anise.

Method: Stir water, sugar, ginger and spices in a non-stick frying pan over medium heat for 2-3 minutes until sugar dissolves. Bring to the boil & reduce heat to low. Simmer for 3 minutes until syrup begins to thicken slightly. Add 1/2 of the rhubarb pieces & cook stirring gently for 3 minutes until rhubarb is tender, repeat with other half. Top on fruit toast with ricotta, natural yoghurt & muesli or enjoy with crumpets or your Sunday pancakes!
